Neapolitan pizza, made in Tuscany

I am a pizzaiolo from Naples. I have lived in Siena for fifteen years, which is long enough to be asked where I am from and long enough to answer both ways.

From Naples to Siena

In Siena I run the pizzeria La Napoletana 2.0. The pizza I bring to your villa is the same pizza I make there, with the same hands.

The dough is T.O.P.N. Neapolitan, left to mature for 24 hours. That part is not negotiable, and it is the reason the pizza tastes the way it does.

The truck came later. People kept getting married out in the countryside, where there is no pizzeria for miles. So I started driving the pizzeria to them.
